There is a periodical entitled _Medicine and Literature_ that I believe
is put out by Johns Hopkins. You may want to look to its
bibliographies, which are very helpful. Medieval medicine is so
understudied, I think you will find it difficult to amass a considerable
body of evidence on epidemics unless you travel to the unedited sources.
For a sound review of the field, you may want to try to get in touch
with Bryon Grigsby of Loyola University Chicago. For the last five
years, he has been researching medicine and disease in the later Middle
Ages. His most recent article on the surgeon in London between 1350-1450
appears in _Essays in Medieval Studies_ 13 (1995). He can be reached
