There's a very nice article on just this subject by Giles
Constable--"Moderation and Restraint in Ascetic Practices in the Middle
Ages," pp. 315-27 in Haijo Jan Westra, ed., From Athens to Chartres (I
can't lay my hands on the publication data at the moment, but this is a
fairly recent collection of essays, mostly focussed on medieval
neoplatonism).
