How exciting that you will both have English undergrads and students taking a certificate in legal studies for this course! They can really bring each other fruitful additional perspectives on issues.
With the caveat that the latter group may not be as well-versed in linguistics terminology and theory as is preferable for this textbook, I would recommend Coulthard, Johnson and Wright's "An Introduction to Forensic Linguistics: Language in Evidence". It comes in both paperback and as an e-book so is easy for your students to get (and perhaps you can get your school library to subscribe to the e-book?). https://www.routledge.com/An-Introduction-to-Forensic-Linguistics-Language-in-Evidence/Coulthard-Johnson-Wright/p/book/9781138641716
It covers most of the topics you outline, as well as authorship analysis, which is the most frequently task type for FL expert witnesses.

- The International Journal of Speech, Language and the Law is a peer-reviewed journal that publishes articles on any aspect of forensic language, speech and audio analysis. https://journal.equinoxpub.com/IJSLL
- Language and Law / Linguagem e Direito is a free, exclusively online double blind peer-reviewed journal published twice a year. It is available on the website of the Faculty of Arts and Humanities of the University of Porto, at http://ojs.letras.up.pt/index.php/LLLD/ .
- International Journal of Language & Law (JLL) is a platinum open access e-journal which offers a scholarly forum for research on the interdependence of language and law, from theoretical approaches to practical problems. http://www.languageandlaw.eu/jll
I'm sure you're aware of the terminological discussions in the filed regarding the breadth of the term "forensic linguistics" - in some regions, it is used as widely as you suggest (and as the title of Coulthard et al. show), in others it is limited to the sub-field 'language as evidence'. If nothing else, it is useful for students to be aware of this discussion.
