as you expected, there is of course a huge amount of archaeozoological information from medieval sites in the Netherlands.
The most comprehensive information you would probably get by using BoneInfo, the Dutch archaeozoological database which you can access at

Getting in touch with Inge van der Jagt at the Rijksdienst voor het Cultureel Erfgoed (RCE) might be useful as well ([log in to unmask]).
Three more recent synthetic papers are listed below, but of course there is much more available.
