Though not sheep/goat I know of a case with pig sterna cut out and deposited in a grave. It is in a grave belonging to the neolithic Pitted Ware group on island Gotland in the Baltic Sea. When the find was published it was identified as rows of seal vertebrae. It is now clear that it is whole sets of sterna from pigs. There were no ribs attached. The original publication ( phd thesis written by Inger Österholm, in swedish: Bosättningsmönstret på Gotland under stenåldern : en analys av fysisk miljö, ekonomi och social struktur. Stockholm 1989). I can try to track it down if you want.
