We wrote up a short article about using human-centred design methods online a few months ago when Australia first went into lockdown:

The article is more written for teaching HCD, but some elements might also be useful for PhD research studies.
There are a few other articles and resources that people have published – we included some of those as links at the end of the article.
Other than that, like Xav, we have also successfully been using Miro (and Zoom) for taking research studies online.

What have you tried? We use Miro to run workshops, brainstorming and collaborative design, and it seems to work all right. Still lacks the physical element but better than nothing.
Online survey and interviews may also be done after you've asked the participants to use certain online things, during a period.

So far my attempts at online co-design have been pretty unsuccessful and I imagine there are many list members who have had their data collection plans for their PhD projects disrupted by the covid-19 pandemic.
