Dear Nimrod,
in the overview I wrote on published Byzantine faunal materials (which includes about 50 sites throughout the Empire) I am sure that I did not encounter one single crocodile bone! But I did not take into account Roman strata and sites (which of course sometimes mixes up). So that is really something special!
For the corocodile-free sites see:
H.Kroll, Tiere im Byzantinischen Reich. Archäozoologische Forschungen im Überblick. Monographien des Römisch-Germanischen Zentralmuseums 87 (Mainz 2010).
Or, shorter, but in English:
H. Kroll, Animals in the Byzantine Empire. An Overview of the Archaeozoological Evidence. Archeologia Medievale XXIX 2012, 93-121.
Best wishes for your research!
Henriette
