(I wish to add a book to Ken's list of "Literature on Organisational
Values and Beliefs". But this is about Organizing as a discipline, so I've
chnged the subject line to be more precise.)
My favorite book on organization is written by my friend (and former
student) Bob Glushko:
http://disciplineoforganizing.org/
*The Discipline of Organizing. *
Bob covers an incredible range of activities, from large databases to
company structure. It's a fascinating book. It seems to be revolutionizing
the way this subject is taught. Who knows, he may have started a
new discipline.
Selected as the Information Science Book of the year in 2014. The 2nd
edition is available: the third edition is in press.
It comes in two versions: one for readers, one for instructors. A number of
chapters are available free as open source electronic version. (See the
URL, above).

Here is the blurb I just wrote for the 3rd edition:
This book changed my views of organizing as the dull, tedious task of
putting things in order into thinking of it as the marvelous study of how
people add structure to things. This new edition expands the domains
covered by previous ones, adding new dimensions to consider, expanding not
just the topics, but our understanding of the power, strengths, biases, and
weaknesses of organizational structures. Glushko is the master of the
discipline of organizing, painting the fascinating story of how different
organizational schemes change our behavior and our thoughts.
