I think you are right, if GCSE is the same as A level, then the new exam will be in 2019, but would confirm after receiving email from Edexcel.

Is the EDEXCEL Chinese going to continue? Quite a few MFL GCSEs and A levels are being scrapped in light of new requirements (Dutch, Portuguese, Hebrew and quite a few more)

I don't think I've seen anything specifically about the Chinese GCSE yet, but it will presumably change along the lines of the French, German, Spanish ones.  My colleagues teaching those languages have begun to attend training on the changes so it may be worth your while seeing if your MFL colleagues have powerpoints from their training to share.  I know that the key ideas will be more spontaneous speaking for the oral tests, no course work, more 'old fashioned' translation and more use of literary texts. I have been asked by my students about the new Chinese GCSE changes.
I am aware that the last examination for current GCSE Chinese is in 2017 June. In 2018 June students will have to take the new GCSE Chinese examination which will contain no controlled coursework.

Could anyone please confirm my understanding is right?

For Chinese learning, Chinese character writing and remembering, might be one of the most difficult parts.
Many years ago when I was teaching in Singapore, I asked my students to put their homework on this website, which is regarding how to teach Chinese character creatively. The main idea is: if we can understand what the radicals' original meaning, then the character will not be that abstract any more. Most of the strokes come with meaning. At the same time, we can escape from the original meaning 造字法,but give the strokes an updated or modern meaning, which help students to remember.
