We started doing some online videos using software called BlueBerry Flashback. The version we have allows you to record the screen then add captions, voiceover, start and end titles etc. Several of the softwares available have free versions online so you can have a go. Depending on your budget I would go for something more sophisticated if you can (Adobe Captivate, Camtasia) which will allow you to move on to interactive videos. (You may not think you'll want to now but it's addictive and you'll soon want to move on from the basics!)
