Andre Vauchez, Sainthood in the later Middle Ages is the classic account.
Interestingly, though, there is a LOT still to be done. I've been working for many years on the canonization process of Thomas Cantilupe, from 1307, and I still come across aspects of the record that puzzle me! Lots of miracles there, though.
