Dear Jason
The most comprehensive and detailed study of this topic is Thomas Charles-Edwards' massive work entitled, strangely enough, Early Christian Ireland (Cambridge UP, 2000). An oldie but a goodie on Irish monasticism is Irish Monasticism (another imaginative title) by John Ryan (Four Courts Press 1972) which is, unfortunately, out of print. As this is one of my areas of specialization, I have lots of other sources if you want to contact me off list.
