Paul,
The publication Landscape Journal has numerous articles related to the use of GIS in Landscape Architecture. You may find some of them of interest.

We teach GIS in studio to undergraduate Environmental Design, Landscape + Urbanism Option students. Those who go on to our graduate program in Landscape Architecture use it in their studio classes and when working in firms after graduation. We use it somewhat more ‘freely’ than a GIS technician might. The students find it to be an invaluable tool.
Good luck with your research and feel free to contact me off the list if you wish.
Best,
Marcella
