Dear John,
You are right. Dionysius is always shown with just a head. I searched the Marburger Bildindex and couldn’t find a Dionysius that looks like the Salem-Dionysius.
The book I have here is: Otto Wimmer, Kennzeichen und Attribute der Heiligen, Innsbruck/ Wien 2000.
Looks like my saint is still anonymous.
