You are familiar with Glunz, History of the Vulgate in England from Alcuin to Roger Bacon, Being an Inquiry into the Text of some English Manuscripts of the Vulgate Gospels. Cambridge: Cambridge University Press, 1933. This work has its limitations, but it's a good start.
He does not make estimates of the kind you do, however, and I'm afraid it might be impossible to say anything about it. Maybe you can make an estimate with the help of Ker, Medieval Libraries of Great Britain (London, 1964.) and do some extrapolating.

There are allegedly 8000 ms copt copies of the Vulgate. Any idea of where I could find an estimate of how many there were in England in the 13th century, or at any specific time in the Middle Ages?
