My first suggestion would also be Daniel Kahneman, though on further
thought, perhaps some others could do well:
(In no particular order)
Mark Granovetter, Noam Chomsky, John Polkinghorne (brilliant guy), Nathan
Myhrvold (another sharp polymath), Clayton M. Christensen, Elon Musk, Luis
von Ahn (interesting practical academic).
And a strange one, but someone I think would give you a very interesting
conversation, Mark Zuckerberg.
