Hi Haskel.
I did a similar exercise a few years ago and used on-line resources to determine rough costs for prepared specimens based on size. You will find Fisher scientific and other sites that sell cows, horses, sheep, dogs for vet schools, for example. Its a rough estimate but I hope it helps.
