Dr. Robert J Lang has compiled of the most useful resource collections on origami applications across different fields. You'll find it at

Lang is an applied physicist and engineer whose work has involved applying origami to problems in engineering and other design fields. Much of his work will translate across to architecture. Lang's web site has a section on publications that you will find especially useful for teaching design students. One area is books -- some of these are a little advanced for BSc level students, but you can use them in developing curriculum and expanding your own knowledge. The proceedings of the International Conference on Origami in Mathematics, Science, and Education are especially helpful, as is Lang's own book Origami Design Secrets. The articles that are linked here are user-friendly and easy to read, so students can get great use of these. Finally, students can see Lang at work in the YouTube Video links. The section on science will be useful to you, and it contains some excellent links to other sites and resources. In this sense, Lang provides a peer-reviewed starting point for those who want to go further in research-based origami for real-world applications. Many of the linked sites provide resources that your students will find useful.

One thing I like about Lang's TED talk is a crisp explanation on the value of research. He says that one of the great secrets to "productivity in so many fields -- and in origami -- is letting dead people do their work for you." This, he says, involves finding ways to turn your problem into a problem that someone else has already solved.
