I started to say there is the prosopographical work of Joan Greatrex,
Biographical register of the English cathedral priories of the province of
Canterbury, c.1066 to 1540, Oxford: Clarendon Press, 1998
At this point my server ceased functioning and I could no longer check my
online bibliography. In the mean time Gordon gave you her new book, which I
was not aware of and will probably give you as much of an overview as you
can get. You may also be interested in her many articles (35 came up when I
checked BREPOLIS), the most relevant may be:

Jon is right: there were 17 English dioceses and 19 cathedrals for the bulk
of the middle ages (i.e. 11th to 16th century). But it is probably wrong
just to think of the English dioceses as the 4 Welsh dioceses were part of
the province of Canterbury too.
