SciLab - a french MatLab clone has a mac version. Like MatLab it has a steep learning
curve but it has lots of functionality including useful things like a kriging extension
and, if your X windows is set up right, the ability to rotate contoured plots on the screen
before saving. Extensions are installed from a menu on the main package.
Personally, I use GMT for almost everything - it is truly brilliant if a bit geeky. I have it
installed on both Linux and Mac boxes. There are lots of helpful scripts that one can easily
customise and nearby geophysicists usually have GMT stuff that will do what you want.

Subject: 3D plotting software
I don't suppose anyone on this list knows about an affordable 3D plotting
and contouring programme like "Surfer" but for the Macintosh do you? Would
rather not get involved with Arc GIS if at all possible too.
