A significant aspect of your topic are the plentiful representations of
the virtues and vices in medieval art. Some useful works on these include:
Adolf Katzenellenbogen, Allegories of the Virtues and Vices in Mediaeval
Art, from Early Christian Times to the 13th Century (London, 1939, often
reprinted)
Jennifer O'Reilly, Studies in the Iconography of the Virtues and Vices
in the Middle Ages (NY: Garland, 1988)
Colum Hourihane, ed., Virtue & Vice: The Personifications in the Index
of Christian Art (Princeton, 2000), with useful introduction
The latter, particularly, has further bibliography. As far as the
non-art historical part of your subject goes, another source is Lester
K. Little, "Pride Goes Before Avarice: Social Change and the Vices in
Latin Christendom," American Historical Review, 76 (1971), 16-49
