To reduce Art to a conversation appears slightly reductive to me. As I pointed out in an earlier comment and according to my judgement, Art and Design functions on different need levels. BUT this does not mean that there is no Need for art, only a difference when it comes to personal experience and priority. Art can be made by man or by nature or in combination. A lot of Dewey's work refers back to how humans are influenced by the experience and exploration of art. To make sense of what we see, is part of human ways of being (i.e. Gärdenfors). Our brain is fairly occupied with making sense of the everyday, the ordinary but it is probably the extraordinary which makes it develop, create new wires.
In my opinion, Art, even if defined differently depending on personality and context, therefore fills a more important role than conversation: it is a precondition for mental well being.
Art is not the Art World created by curators, critics and collectors and which is often not even recognized by the artists themselves. Nor to they sympasize with it.
The Art World may be simulating a dialogue but this is not necessarily applicable to (the world of) art.

Ken,
I agree with you generally about user testing but there are no
"ordinary users" of Art. Art is a conversation and only the people who
are part of the conversation matter. There are no other real
"users." (If people who are not part of the conversation get something
out of overhearing, that's great but almost beside the point.)
Where my analogy really falls apart is in the fact that most Art
faculty are not part of the conversation; they just simulate a role in
the Art dialogue.
