I'd have the conversation with a mobile specialist first rather than an iPhone specific developer. Once you've done that, move on to the specifics. As Jim points out, iPhone is a compelling but also rather small audience. There are lots of other ways of putting together mobile experiences; lots of ways of building iPhone apps (for instance, PhoneGap / Appcelerator, mobile browser or even SMS(!) as alternatives to "raw" iPhone App development) and also lots of things to think about that should really come before the technology discussion. I know a couple of mobile guys who'd be able to advise - ping me off list if you need contact details.
On a side note, I'd personally push back against cultural heritage building online collections apps (for reasons outlined here: http://bit.ly/6zzdtR) in favour of looking at the *reason* for the "mobileness" of the app (ie. location, portability, gaming, use-case, etc). It seems to me that CH could easily build some _really_ compelling apps by looking hard at the use cases and the audience OR head in a fairly bland "see our collections on a tiny screen" direction. I know which I'd like to see.
