Hi Jesper,
The North Ronaldsay sheep of the Orkney Islands in Scotland feed on
seaweeds, the main ones are the brown kelps principally Laminaria
hyberborea and Laminaria digitata, there is also Laminaria saccharina
and Alaria esculenta, they also nibble Focus type seaweeds (wracks),
you can find articles on their diet by google ... one popular site is

Hope this helps, I am also interested in the uses of seaweed so would
be good to hear other examples.
