There are a few in the Mendelsche Hausbüchern der Nürnberger Zwölfbrüderhausstiftung.
This one is dated to 1450: http://www.nuernberger-hausbuecher.de/75-Amb-2-317-71-v/data
Jost Amman's Standebuch (1568) has one as well, but it's a bit later:

I "know" several more, but these were the only ones I could find quickly online. Let me know if you want me to look for others.

Subject: poleaxe
Dear all,
Does anyone know of an illustration showing an animal being
stunned/slaughtered by a poleaxe. I would prefer it to be medieval or
earlier and the butchered animal a cow/oxen/bull but I would be grateful for
anything else you can provide.
Thanks in advance
Kevin
