Some stray notes, not forgetting your early modern interests:
If you go North, by all means visit Durham Cathedral. If you can arrange it, either in advance or on short notice, step across the green to the university's Palace Green Library and have a look at Bishop Cosin's Library with sixteenth-century books in their original wooden cases. If you have time, cross the Wear on Prebends Bridge, turn right, and head towards town along the river for some great views of the cathedral (turning left and heading up to St Oswald's is worth it too, so if you have an extra few minutes to spare do that first and then head back to town along the river).
If you go North, you will probably visit York Minster (as at Durham, visit the Treasury; this time it's in the undercroft, where you can also see some of the building's massive piers and also remains of the administrative building that had been at the center of the legionary fortress).
You might consider having an inexpensive lunch in the cafeteria of King's Manor, a sixteenth- / early seventeenth-century building on which see:

If you're driving, between Durham and York are Ripon Minster and Fountains Abbey.
Similarly, if you're driving and you go to Ely (as you should; the cathedral is also an easy walk from the rail station and the connections from Cambridge are good), go north from there and collect Peterborough and Lincoln cathedrals. From Lincoln, you could go over to Boston and view St Botolph's (the Boston Stump). Or, for something a little earlier, drive up to Barton-upon-Humber and visit St Peter's church with its Saxon tower.
If you're in the West Midlands, Chester is a must.
