Check out Lee Lyman's new book Quantitative Paleozoology. If they understand chapters 2 and 3, your students will have all the basics. In fact just understanding Ch 2 will put them ahead of many other students of zooarchaeology.

Hi all. I am lecturing on quantification this week for my archaeozoology class. I wonder if anyone has a good exercise that my students can do in class to really get the information across?
I am already using comparative material for as a "mock assemblage" for their final project and that is my only idea. I wonder if anyone had any suggestions.
