A resource that I have found a great starting point for this topic is:
"Ornament of the World: How Muslims, Jews and Christians Created a
Culture of Tolerance in Medieval Spain"
Menocal, Maria Rosa
2003
It deals specifically with Spain which is where you have probably heard
of these less contention religious relations.
