In answer to your question about bibliographic citations, it may not be presented as an Application Profile as such, but you may wish to consider the recommendations in Guidelines for Encoding Bibliographic Citation Information in Dublin Core (http://www.dublincore.org/documents/dc-citation-guidelines/) and its use of the OpenURL ContextObject journal and book metadata formats. I don't think any examples actually have end page but it is available as 'epage'.
Also you could look at these metadata formats directly. See Metadata Formats in the registry http://www.openurl.info/registry/ . There are both XML and Key Encoded Value (KEV) metadata formats for journal and book.
Another possibility may be to adopt some PRISM elements (http://www.prismstandard.org/), using a publisher standard.
