Dear Jacopo, Rob Symmons has extensive density measurements from sheep
(n=95) in his PhD thesis, complete with consideration of age, sex,
individual variation and so on. His technique is more sophisticated than
most of the earlier studies too. It's from 2002 at the Institute of
Archaeology, UCL. The methodology is published in JAS 31:711-719 (2004).
