I haven't read Binski, but I think he's barking up the wrong tree. Lateran
IV established transubstantiation as doctrine (dogma), but that was just one
stage in the process separating clergy from laity. Rather more to the point
is probably the shift in the position of the altar from free-standing on the
chord of the apse, with the clergy seated around the inside of the apse, to
hard up against the east wall. This may or may not be connected with the
change to square east ends at the end of the twelfth century.
