for the theory, I would suggest to begin with LeBihan
2001 in J Magn Reson Imaging, and for more details, to
go into Beaulieu 2002 in NMR Biomed (anisotropy) and
Gass 2001 in J Neurol Sci (mean diffusivity).
For the practice, you should maybe have a quick look
to Jones 2005 in NeuroImage ("The effect of filter
size on VBM analyses of DT-MRI data") to understand
better why you should carefully read Smith 2006 in
Neuroimage ("Tract-based spatial statistics: voxelwise
analysis of multi-subject diffusion data") and maybe
use subsequently TBSS...
