It is quite common in both literature and iconography to have Infancy figures and scenes prefiguring the Passion (the ultimate reason for the Incarnation). Your comment about the image emphasizing the real presence (also an Incarnation theme) also seems quite apropos. The appearance of the Christ Child
as a Eucharistic symbol also seems largely later medieval to me, though there are a few earlier instances.

Many thanks to all those who have offered suggestions about the identity of my "mystery saint". I've looked up what I could of St Isidore the Farmer (aka of Madrid), St Guthlac and St Fiacre, gardeners all, but I have not been able to relate the main scene to any of them. It has also been suggested that it may be significant that the Christ Child on the altar is pointing up towards an image that seems to be either the Road to Calvary, or perhaps someone having a vision of Christ carrying his cross. I have also been wondering whether the Christ Child on the altar might have something to do with the doctrine of the real presence, particularly since he seems to have emerged from the tabernacle just behind the altar, which, I believe, was reserved for consecrated hosts.
