I just tried to change the log directories in server.xml on Brian's
pet dcache with only some results. Checking on the web, it looks like
if I want to move where catalina.out is sent to I need to change
things in the catalina startup script (catalina.sh):

Where I'd have to replace each instant of
"$CATALINA_BASE"/logs/catalina.out with /var/log/tomcat/catalina.out.
Delving a bit deep for my liking but I think it's the only way (other
then to turn the logging back right down).
