sorry, i misunderstood the question.
"tempera" is the technical term, i believe:

the problem is how to get the pigments to bind with the ground medium.
egg yoke works fine as a binding medium, but has the disadvantage
--particularly when applied to a flexible memdium like parchment.
it has to be done "just right" or it will flake off.
i have no idea what "just right" might mean in the above context.
perhaps the trick is to get the proper mixture of the ingredients such that
the tempera *soaks into* the parchment, rather than sits on top of it, in
which case it can flake off.
it seems like the illuminations in Byzantine mss. have more tendency to
flake than do western ones, but that is just a random impression i have.
