Hi Richard,
Fourteenth century dump deposits in Dublin produced a large cache of horn
cores of calves in an assemblage that was otherwise characterised by mature
cattle. It is suggested that they represent calf skins being brought into
the town independent of the main trade in cattle for food purposes,
essentially a dump material from a vellum works. A parchment pricker as
also found.

Presumably you know of the assemblage from Deirdre's site on Lindisfarne.
There is also a suggestion that the large number of neonates/young calves
at Flixborough (possibly monastic) may reflect vellum production. The same
is true for 11th-13th century Vanern in Sweden. For references to all

I'm pretty sure that vellum production was also suggested for Eynsham
Abbey, again based on the presence of young cattle.
