Yes. Offertories are indeed problematic. It appears that the verses
in their full glory could have been added slightly later (hence the
varied traditions), or may their text and music were fixed later.

Indeed: the gregorian Chant corpus is not homogeneus and shows
its different origins. Incidentally, the gregorian (old-roman) offertory
for the first sunday in Advent serves as "ingressa" in the ambrosian
rite.
