Dear Uriel,
Still useful is F.D. Klingender, Animals in Art and Thought to the End of the Middle
Ages (Cambridge, Ma., 1971). Bestiaries are another useful source of animal
symbolism. There are many illustrated examples, particularly from the 12th and
13th centuries. A useful collection of bestiary texts, including those of Pierre de
Beauvais, Guillaume le Clerc, Richard de Fournival, Brunetto Latini and Jean
Corbechon, has been translated into French by Gabriel Bianciotto, Bestiaires du
Moyen Age (Paris, 1995). A very interesting study of the social and religious
implications of animals in the Middle Ages is Joyce E. Salisbury, The Beast Within:
Animals in the Middle Ages (New York & London, 1994).
