medieval-religion: Scholarly discussions of medieval religion and culture
I recall seeing lots of pelicans (or storks - same idea) on nests atop
crucifixion scenes in Toledo and other parts of Spain. These are
sculptural; I don't actually recall any painted images, but it was a
while ago. I came away with the impression that it was a very popular
theme in that locale during the middle ages. That's not very helpful
but any book or web site on medieval Toledo should turn up some images.
Actually, once in Spain I saw a stork on a nest atop a roadside
crucifixion - then the stork moved! It was the real McCoy... absolutely
splendid, and sitting there exactly like its sculptural counterparts!

The pelican also appears in some of the fullest depictions of the
Instruments of the Passion. But no legible wall paintings that I know
of.
