We come at last to the Embolism, which is the filling in the sandwich
and varies according to the season or the kind of Mass being
celebrated. Fr Ambrose will correct me if I am wrong, but I believe
this embolism to be a feature only of western liturgies; the eastern
ones, so far as I know, have fixed and unchanging prefaces.

My knowledge of Latin liturgy has not been updated since the early 1960s
when I recall that the word Embolism was used for the prayer which followed
the Pater Noster.... "Libera nos, Domine, quaesumus, ab omnibus malis....
etc." So I am not familiar with the term as applied to something inserted
into the Prefatio.
And you are right, if we are talking about a post Pater Noster prayer, that
no embolism is found in the liturgies of the Byzantine Rite. But I had the
joy of attending a Liturgy of the Assyrian Church of the East and noticed
that they do have such a prayer inserted after the Pater Noster. Please be
patient with me while I type it in from the Liturgy book which they kindly
gave me:---
"O Lord God of hosts, our good God and our merciful Father, we beseech you
and supplicate the abundance of your mercy, do not, my Lord, bring us to the
test, but deliver us from the Evil One and his hosts, for yours is the
kingdom, power, might, strength, and dominion, in heaven and on earth, now,
always, and for ever and ever. Amen."
<none of which of course has anything to do with the Embolism of which you
are speaking in the Prefatio :-)>
