Others on this list are certainly better-informed than I on the
subject, but if I had to limit it to six I'd be sure to include
Ouspensky _Meaning_, Ouspensky and Lossky _Theology_, Pelikan, and
Galavaris; primary sources worth considering would be St. John of
Damascus _On the Divine Images_ and the translation of the relevant
session from the Seventh Ecumenical Council by Sahas cited on the
latter page above.
Note that the NPNF volume of the councils is on-line, too:

and if either space or cost are a factor in limiting the selection to
six this might be worth adding for the conciliar documents.
I also asked a Byzantinist friend her opinion and she wrote:
