Some of the more recent and accessible books are:
Christiansen, E. The Northern Crusades (most recent edition is London:
Penguin, 1997).
Urban, W. The Teutonic Knights: A Military History (London: Greenhill Books,
2003).
Both books have good bibliographies.

Leszek Slupecki's Slavonic Pagan Sanctuaries (Warsaw: Institute of Archaeology
and Ethnology, 1994) is one of the few works in English, but it may be a
little early for your timeframe. Unfortunately the vast proportion of studies
on the Baltic peoples are relatively inaccessible and of course require
knowledge of the relevant language - as I've been finding out in my enquiries
on the Teutonic Order in Poland, Latvia, Lithuania and Estonia.
All the best,
