medieval-religion: Scholarly discussions of medieval religion and culture
Herbert Musurillo, _Acts of the Christian Martyrs_, Oxford Early Christian Texts (Clarendon Press, 1972), would include the trial of the Scillitan Martyrs of North Africa, ca. 180 which appears, as far as I know from the scholarly consensus, to be a Christian-edited court transcript.
But generally, very little has survived except via Christian channels--there's Pliny's account of his interrogation of two Christian "maids" (deaconeses? slaves who were Christians) in his letter to Trajan, and Trajan's supposed reply.
All these documents are anthologized in English translations in James Stevenson, _A New Eusebius: Documents Illustrating the History of the Church to A.D. 337_ originally a revised edition of B. J. Kidd's anthology, published in 1957, then redone and expanded by W. H. C. Frend (SPCK, 1987).

There is a rarely mentioned 3-volume collection of translated sources by
P. R. Coleman-Norton entitled "Roman state & Christian Church: a
collection of legal documents to A.D. 535" (London: S.P.C.K., 1966). I
haven't looked at it for years, and our library's copy is in remote
storage, but it *might* provide an easy way to identify some of the
materials you are looking for. Good luck. John
