You could read Giunta Bevegnati's Legend of Margaret to see if there's an allusion to the color. It's been recently re-edited by Fortunato Iozzelli as _Legenda de vita et miraculis Beatae Margaritae de Cortona_ (Grottaferrata: Editiones Collegii S.
