Dear Andre,
My favorite method is simply macerating in (ideally warm) water for
several weeks, with frequent changes of the water. It is best to
remove as much flesh as possible by filleting first. It can be smelly
& takes time, but leaves the bones in perfect condition.
Best wishes,
James
