There has been one study of this for human bones. The teaching collection
at Bradford University was examined and the extent of post-excavation
breaks and missing bones was recorded and compared to the original
osteological reports. The study is by Anwen Caffell and is published in:
Human remains : conservation, retrieval and analysis, edited by Emily
Williams. Oxford : Archaeopress, 2001. BAR. International series 934.
