I have no written sources but there are a couple of examples in Norfolk for
the viewing!, A cottage in Wiveton has sheep or cattle metapoids stuck in
above the window heads and a whale jawbone is inserted into a garden wall in
King's Lynn, this forms a spy-hole. May be of interest?

Does anybody know of anything written on the use of bones in architecture?
I am thinking specifically of the use of animals bones as decorative, or
non-structural elements in buildings, although anything on the subject
(including whalebone houses) would be most useful.
