Ethan,
The best map you are likely to find is the 1:250,000 Geological Map of
Israel published by the Geological Survey of Israel. You will see the major
fault systems on this map. As far as I know, the map is sold in the library
of the Geological Survey in Jerusalem. You will probably find contact
details in the Surveyıs web site (http://www.gsi.gov.il/english1.htm). More
details maps (1:50,000) of certain areas can also be found at the same
place.
Quaternary volcanism is widespread in the northern part of the country with
the youngest lava flow as young as 10,000 years. If you need some more
information you can contact me. There are lots of good review papers on
different aspects of the geology of Israel.
