There's an enormous literature on the subject, though most of it is in
Hebrew. The best source by far is the bibliography published by
Professor Yosef Tabory,Reshimat maamarim be-inyene tefilah u-moadim. For a start in English, there is important information (as well as bibliography) in S. Reif, Judaism and Hebrew prayer : new perspectives on Jewish liturgical history.

I should say my main experience is of English Jewish worship in a synagogue which is a hybrid of both Ashkenaze and Separdic practises.
