Surely this is a reference to the Feast of the Passover ? A Jewish festival
named to provide spurious authenticity to the document. On what day the
Passover was celebrated in 1312 could be answered by a Jewish historian, I
should think, but it would not be the same as either Easter or Whitsun
although it might be the same day as Easter if the moon was right! But would
the date matter much if the document was a fake ?
